  1. In a large pot, heat olive oil over medium heat. 
  2. Add onions and garlic and stir fry lightly until fragrant, about 1-2 minutes.
  3. Add tomato and cook, continuously stirring, until the tomatoes soften, about 3 minutes.
  4. Pour in water and turn the heat up to high.
  5. Add carrots, cabbage, tomato paste, coconut milk, ketchup, salt and pepper. Bring to a boil, then cover and reduce the heat to low and simmer for 10 minutes.
  6. Add potatoes and ham (optional). Simmer uncovered for 15 more minutes, or until the potatoes are soft and tender, but not dissolved
